If you hadn't figured out already I was on a Flour less and Gluten free challenge for the day. I've found that using Gluten free flours produce an odd flavour to some cakes, so instead I prefer to use the nut base cake's instead. They stay moist for long and under cooking them is best, and totally natural!

  2. For work, I've been trying some new gluten free stuff every week, but this is the first time that I've actually been happy with the result! Plus Gluten free cakes usually stay dense for longer!
