Recently i went home to New Zealand for Christmas. Me and my mother cooked up a huge storm both boxing day and christmas day. Eggs benedict for brekkie, salmon and prawn skewers on the bbq for lunch, and for dinner Roast turkey, with kumara mash, smashed potatoes, steamed asparagus and beans with gravy!
It seems to almost be a tradition now that i make cheesecakes at christmas and so i came up with these.... although i forgot to take a photo but found this one of my mothers!
White chocolate and vanilla bean cheesecakes, made with a chocolate coconut base, with fresh strawberries!
